Field Trip to Pacific Culinary Arts school

Last wednesday Ms Morabito took us on a field trip to a culinary arts school because she's the best teacher I know. We got to take a tour around the school it looked like a good school. Then we got to eat a appetizers , main course lunch, and some chocolate cake for dessert. The food there was all really good my favourite was the bread and the chicken it tasted really good.

Mexicali Pizza Wheel

Last week we make a mexicali pizza wheel and it was ok. We First made a dough with flour, yeast, cornflour. Then the next day we fried our filling of meat, tomato sauce,oregano, green chilli's. After we put the filling on the dough we spread some cheese over the pizza and put it in the oven. I thought this pizza wheel tasted ok the thing i didn't like was that it tasted kind've plane like no flavour. I think this would have been better if it was spicy.

Spanish Tortilla Tarts

In baking class we made spanish Tortilla tarts which are kind've like a spanish muffin. We made a muffin batter with eggs,flour,cheese, and some green peppers. These tarts tasted good. I really enjoyed these tarts because of the cheese and the green peppers. The key do making this was to mix it only about 6-7 times otherwise your final product would have tunnels in it.

Cream Pie

In Baking class we made a cream pie. We first made the dough for the pie shell using flour, butter, water, and salt. Then we made a vanilla custard  for the filling and then we made cream by whisking egg whites and meringue power together which would go on as a topping. This cream pie was pretty good because of the vanilla custard.

Doughnuts

On friday we made doughnuts. First thing we did was make the dough with yeast, flour, sugar, water. Then after we made it into a doughnut shape and we fried them in oil on an electric fry pan. Then we finished it off by dipping it in chocolate sauce with sprinkles this tasted very good. I enjoyed these doughnuts mainly because of the chocolate glaze and sprinkles. The yeast in the recipe made the donuts have a wierd taste.

Garden Herb Bread

This week we also made a yeast bread with flour, salt, yeast, sugar, water, rosemary, basil, oragano for flavour. I did not like this bread because I didnt like the taste of the herbs used in the recipe. What would have made this bread better would be if we used cheese in it.

Calzone

This week we started our yeast bread unit with calzones. This calzone was pretty good but the outsides were too crunchy like chips. We made the dough first with flour, yeast, sugar, salt, and water then we let it rest for a day. The next day we made the filling of tomato sauce with oragano and we also fried onions and mushrooms then added the tomato sauce. After we put a little bit of the sauce to each calzone then put it in the over to cook. This recipe was pretty easy to do. The filling for this was the reason it tasted good


Cream Puffs

A couple weeks ago in baking class we made cream puffs and it tasted pretty good. We first made the bun with flour, sugar, butter, and eggs and we made this dough over the stove then poured it on the cookie sheet and put it in the oven . While it was baking we made a chocolate cream filling with melted chocolate chips then put it in a piping bag. Once the buns were ready we cut a slit in the bottom of it and squeezed the chocolate in. This tasted really good mainly because of the chocolate cream

Apple Pie

We made an apple pie and it was very delicious. We first made a dough which was a simple quickbread recipe of flour, salt, butter, and water to put the ingredients together and form the dough. Then we rolled out this dough and put it in the pie plate. After we filled the pie with an apple filling that we cooked over the stove with fresh apples, lemon juice, cinnoman, and water. Then we cover the top with the left over dough. I really enjoyed this pie because the apple fill surprisingly tasted really good. It was one of the best things we made in this class


Peach Cobbler

A little while ago we made a peach cobbler which is basically some canned peaches with a dough topping. First we put the canned peaches in a casserole dish then we poured some lemon juice on top. While that was going on someone else in the group was preparing the dough that would go on top.The dough consisted of flour,baking powder, sugar,and water. Then its goes in the oven. This peach cobbler tasted very good because of the peaches the dough on top couldve been better if we put whip cream of something sweet on top.

Brownie comparison

In class we had a choice between two types of brownies. Our group decided to make the chocolate brownie with alot of sugar. Our groups brownie wasnt that good because it turned out hard. The one that was made with apple sauce turned out better because it had a better taste and it was softer.

Pizza Scones

A few days ago we made these pizza scones and they tasted really good we used tomato sauce, green peppers, salami, olives, and cheese. The pizza tasted really good because of the vegetables and the cheese. I enjoyed making this pizza it was fun.

Banana ginger parkin

Two days ago Ms Morabito let us choose our own healthy recipe because she's the sweetest teacher. Our group chose the banana ginger parkin because it look like an intresting recipe. I liked making this because it was easy and straight forward. I enjoyed this cake because it had a nice ginger taste with banana which was awesome.

flood cookies

A little while ago we made cookies with icing on top of the cookie we made most of these cookies for us and we gave three to our favourite teachers I decided to give mine to Ms Morabito because she is the nicest and the best teacher I've ever had <3 . We made two different types of icing one was for flooding our entire cookie and the other for doing the border. This cookie tasted really good because of the icing and it looked fantastic.

Apricot Crunch Muffins

We made these suprisingly delicious Apricot crunch muffins. In this recipe we used the muffin method which means we didnt mix the batter only until it was lumpy. We used cinnamon and apricots in this recipe. We had a crumby topping for it too with some almonds, sugar, and butter mixed together. I thought this muffin was goin to taste bad because of the ingredients we used but i was shocked at how good this was.

Jalapeno Cheese Muffins

Last Monday we made jalapeno cheese muffins with flour, cornmeal, corn , and bell peppers. It tasted really good because of the cheese and i also liked how it was a little spicey.  When making this recipe you only need to stir the liquid and dry ingredients about 6 times so there arent any tunnels in the final product.

Fondant Layer Cake

We made a fondant layer cake with fondant that was made out of marshmellows it tasted really good. we first made a chocolate cake then after we make fondant by melting marshmellows on a stove. after we rolled out the fondant and put it on the cake then we finally added the pocodots and a bow tie to out cake.

Valentine Cake

We made a valentine cake and it was really good because of all the strawberries on top. It was a foam cake that had whip cream on top with chocolate covered strawberries on top. The Strawberries made it taste good.

Celebrity chef James Martin

James Martin is a celebrity chef from North Yorkshire, England. He was born on june 30th, 1972. He made his first tv apperance in 1996 with various programs. James Martin bacame more popular on the bbc program Ready steady cook. Here the recipe for his New York Rasberry cheesecake

1 vinilla pod         
grated zest and juice of 1 lemon
200g of caster sugar
50g corn flour
850g full fat soft cream cheese
4 large eggs
375ml double cream
400g of rasberries
150ml of maple syrup
                                            
  1. Preheat the oven to 180°C/350°F/Gas mark 4. Cut the sponge base to a diameter of 23cm if necessary, then slice in half horizontally to form a 5mm thick disc, and place it in the bottom of a springform 23cm cake tin.
  2. Split the vanilla pod in half lengthways and scrape out the seeds. Put the vanilla seeds, lemon zest and juice, sugar, corn flour and cream cheese into a bowl and whisk together. Add the eggs, one at a time, beating well between each one. Add the double cream, whisking until the mixture is smooth, then add 250g of the raspberries and stir carefully through the mixture.
  3. Pour into the cake tin and tap it lightly to settle the mix. Put the cake tin into a roasting tray, then pour hot water into the tray to a depth of 2cm to create a bain marie. Bake for 1¼ - 1½hours, until the top is golden and the cheesecake just set. Remove from the oven and allow to cool in the tin. Remove and place on a serving plate, then top with the remaining raspberries and drizzle over the maple syrup. Serve with a drizzle of double cream.

We made ice cream cupcakes using cupcakes in a cone and covering with icing. We made people  think that it was ice cream. I thought it tasted very good because of the icing.
